nick’s supernatural brownies

i am perpetually in search of the perfect brownie recipe. i definitely prefer fudginess over cakey-ness. another must? a flaky crust. i have a long list of ones to try, but after making these, i’m less motivated to try all the rest. these are easy to make and even better to eat. give them a try. i beg of you.

the ingredients:

canola oil cooking spray

16 tbsp. unsalted butter

8 oz. bittersweet chocolate (broken into smallish pieces)

4 eggs

1 cup sugar

1 cup firmly packed dark brown sugar

2 tsp. vanilla extract

1⁄2 tsp. fine salt

1 cup flour

the method:

preheat the oven to 350.

spray a 9 x 13 baking pan, and line with parchment paper; set aside.

carefully melt the chocolate and butter in the microwave (i did 30-second increments as not to burn it). remove, and whisk until thoroughly combined.

in the bowl of an electronic mixer fitted with the paddle attachment, quickly beat the eggs until broken up. add the sugar, brown sugar, vanilla, and salt, and beat to combine. add the chocolate mixture, and fold in flour. pour the batter into the prepared pan; spread evenly. bake until a toothpick inserted into center comes out clean, 28-32 minutes. let cool on a rack. cut, and serve.

or top with vanilla ice cream.
